Jasmine rice is essential for its fragrance. Long-grain rice can work, but jasmine gives the most authentic flavor.

Prepare the chicken.
Rub 1 whole chicken with salt to clean the skin, then rinse well. This helps create smooth, firm skin.

Poach the chicken.
In a large pot, bring water to a gentle boil with ginger, garlic, and green onions. Lower the chicken into the pot and simmer gently for 30–40 minutes until cooked through. Remove and immediately place the chicken in an ice bath to stop cooking and firm the skin.

Reserve the stock.
Save the poaching liquid—this will be used to cook the rice and make soup.

Cook the rice.
Heat oil in a pot and sauté minced garlic and ginger until fragrant. Add washed jasmine rice and stir well. Pour in measured chicken stock and cook until fluffy and aromatic.

Prepare the sauces.
