Introduction

Made primarily from potatoes, rösti perfectly captures the Swiss appreciation for simple ingredients prepared with care and precision. Across Switzerland, rösti appears in many forms—served plain, topped with eggs, paired with meats, or enjoyed alongside rich sauces. No matter how it is served, rösti remains a symbol of warmth, simplicity, and home-style cooking.

How Rösti Is Made
Step 1: Prepare the Potatoes
The potatoes are parboiled with their skins on, then cooled, peeled, and grated. This step is key to achieving the right texture.
Step 2: Season and Shape
The grated potatoes are seasoned with salt and gently shaped into a loose, flat cake. Avoid packing them too tightly to keep the inside soft.
Step 3: Cook Slowly
Heat butter in a pan and add the potato mixture. Cook over medium heat until the bottom becomes golden and crisp. Patience is important here.
Step 4: Flip Carefully
Once the bottom is well-browned, flip the rösti carefully and cook the other side until equally crisp.
Step 5: Serve Hot
Serve rösti immediately while crisp on the outside and tender inside.

Do not rush the cooking—slow heat creates better texture.
Use a non-stick or well-seasoned pan for easier flipping.
Butter enhances flavor and color, so do not skip it.
