Introduction
Pavlova is one of New Zealand’s most celebrated desserts, loved for its delicate texture and beautiful presentation. With a crisp outer shell and a soft, marshmallow-like center, pavlova feels light yet indulgent, making it perfect for warm weather, festive occasions, and family gatherings.

Often topped with clouds of whipped cream and vibrant fresh fruit, pavlova is a dessert that highlights balance—sweetness without heaviness and elegance without complexity. In New Zealand, it is especially popular during summer holidays, Christmas, and celebrations where sharing food is part of the joy.
What Makes New Zealand Pavlova Special
What sets New Zealand pavlova apart is its texture. The outside is gently crisp, while the inside remains soft and airy. This contrast is the heart of a perfect pavlova and requires careful baking and patience.
New Zealanders also favor fresh, seasonal fruit as toppings. Kiwifruit, strawberries, passionfruit, and berries add freshness and a slight tang that balances the sweetness of the meringue and cream.
Ingredients Used in Pavlova
Egg Whites
Egg whites form the base of pavlova.
Tip: Use room-temperature egg whites for better volume.
Sugar
Fine caster sugar is slowly added to create a glossy, stable meringue.
Tip: Add sugar gradually to ensure it fully dissolves.
Cornflour and Vinegar
A small amount of cornflour and vinegar helps create the soft, marshmallow center.
Tip: These ingredients are essential for the classic pavlova texture.
Whipped Cream
Lightly sweetened whipped cream adds richness and softness.
Tip: Whip just until soft peaks to keep it light.
Fresh Fruit
Kiwifruit, strawberries, passionfruit, or mixed berries are commonly used.
Tip: Use fresh fruit just before serving for the best flavor and appearance.
How to Make Pavlova
Step 1: Prepare the Meringue
Whip the egg whites until soft peaks form, then slowly add sugar while continuing to beat until the mixture becomes thick and glossy.
Step 2: Add Stabilizers
Gently fold in the cornflour and vinegar, being careful not to deflate the meringue.
Step 3: Shape and Bake
Spoon the meringue onto a lined baking tray, shaping it into a round with a slight dip in the center. Bake at a low temperature until crisp on the outside.
Step 4: Cool Slowly
Turn off the oven and allow the pavlova to cool completely inside. This prevents cracking and keeps the center soft.
Step 5: Decorate and Serve
Top with whipped cream and fresh fruit just before serving.
Tips for the Perfect Pavlova

• Use clean, dry bowls to whip egg whites
• Bake low and slow for the right texture
• Let the pavlova cool fully before decorating
• Assemble just before serving to keep it crisp
What to Serve with Pavlova
Pavlova is usually served on its own, but it pairs beautifully with:
• Fresh fruit sauces or coulis
• A light dusting of icing sugar
• A cup of tea or coffee
Pavlova is more than just a dessert in New Zealand—it’s a symbol of celebration, summer, and shared moments. Light, airy, and beautifully balanced, it continues to hold a special place on New Zealand tables and in its food culture.
