Introduction

Khubz is one of the most essential and widely eaten foods in the United Arab Emirates. Simple, soft, and versatile, this traditional Arabic flatbread is served with almost every meal. Whether paired with grilled meats, scooped into rich stews, or wrapped around shawarma and falafel, khubz plays a central role in daily Emirati dining.

Though it may appear humble, khubz is deeply rooted in Middle Eastern culture. It represents nourishment, hospitality, and togetherness. In many Emirati homes, a meal feels incomplete without fresh, warm khubz on the table.


What Makes Khubz Special

What sets khubz apart is its texture and versatility. When baked correctly, it puffs up to form a soft interior pocket while remaining tender and slightly chewy on the outside. This makes it perfect for dipping, wrapping, or tearing and sharing.

Khubz is not heavily flavored, and that is its strength. Its mild taste allows it to complement bold spices, rich sauces, and grilled foods without overpowering them. It quietly supports the meal while enhancing every bite.


Ingredients Used in Khubz

Flour

All-purpose flour or whole wheat flour is commonly used. Whole wheat versions are especially popular in traditional households for their hearty flavor.

Yeast

Yeast helps the dough rise and creates the light, airy pocket inside the bread. Fresh yeast ensures better puffing during baking.

Water

Warm water binds the dough and activates the yeast. The right hydration level keeps the bread soft.

Salt

Salt adds balance and enhances flavor without making the bread heavy.

Olive Oil (Optional)

A small amount of olive oil is sometimes added to make the dough more tender and flavorful.


How to Make Khubz

Step 1: Prepare the Dough

Mix flour, yeast, salt, and warm water in a bowl. Knead until a soft, smooth dough forms. Cover and let it rest until doubled in size.

Step 2: Divide and Shape

Once risen, divide the dough into small balls. Roll each ball into a thin, round disc.

Step 3: Cook the Bread

Traditionally, khubz is baked in a very hot oven or on a hot griddle. As it cooks, the bread puffs up, creating its signature pocket.

Step 4: Cool Slightly

Remove from heat and cover with a clean cloth to keep the bread soft. Serve warm or at room temperature.


Tips for Perfect Khubz

  1. Use high heat to help the bread puff properly.

  2. Roll evenly for consistent cooking.

  3. Do not overcook, or the bread will become dry.

  4. Keep cooked khubz covered to retain softness.


What to Serve with Khubz

Khubz pairs beautifully with hummus, moutabal, grilled meats, stews, shawarma, falafel, and traditional Emirati dishes like machboos or salona. It is also enjoyed simply with olive oil or labneh.

Khubz may be simple, but it is the foundation of Emirati cuisine. Soft, warm, and endlessly adaptable, it connects meals, people, and traditions—proving that the most basic foods are often the most important.
