Introduction

Pide is one of Turkey’s most loved traditional baked dishes, often referred to as Turkish flatbread but enjoyed as a complete meal on its own. Shaped like a long boat and filled with flavorful toppings, pide is warm, comforting, and deeply satisfying. It is commonly found in bakeries, family restaurants, and homes across Turkey, served fresh from the oven.

What makes pide special is how it brings together soft yet slightly crisp dough with rich, savory fillings. Whether topped with meat, cheese, vegetables, or eggs, pide offers endless variety while keeping its comforting, homemade feel.


What Makes Turkish Pide Special

Turkish pide stands out because of its unique shape and texture. The edges are folded and pinched to create a boat-like form that holds the filling perfectly. As it bakes, the crust becomes golden and slightly crisp, while the inside stays soft and fluffy.

Unlike pizza, pide is less about heavy toppings and more about balance. The ingredients are simple, well-seasoned, and allowed to shine without overpowering the bread.

Dough

Pide dough is made from flour, yeast, water, salt, and olive oil. It is soft, stretchy, and easy to shape, allowing it to bake evenly while staying light inside.

Meat Fillings

Minced lamb or beef mixed with onions, tomatoes, peppers, and spices is a classic choice. This filling is savory, juicy, and full of warmth.

Cheese

Turkish white cheese or kasar cheese is commonly used. It melts beautifully and adds richness without being too heavy.

Vegetables and Extras

Spinach, mushrooms, peppers, tomatoes, and eggs are popular additions. An egg cracked on top near the end of baking is especially traditional and comforting.


How to Make Pide

Step 1: Prepare the Dough

Mix flour, yeast, water, salt, and olive oil to form a soft dough. Knead until smooth, then cover and let it rise until doubled in size.

Step 2: Prepare the Filling

For meat pide, mix minced meat with finely chopped vegetables, spices, olive oil, and a little tomato paste. For cheese or vegetable versions, prepare fillings separately.

Step 3: Shape the Pide

Divide the dough into portions and roll each into an oval shape. Add the filling down the center, then fold and pinch the edges to form a boat shape.

Step 4: Bake

Bake in a hot oven until the crust is golden and the filling is cooked through. If using eggs, crack them on top during the last few minutes of baking.

Step 5: Serve

Remove from the oven, brush the crust lightly with butter, and serve hot.
