How to Make Pide
Step 1: Prepare the Dough
Mix flour, yeast, water, salt, and olive oil to form a soft dough. Knead until smooth, then cover and let it rise until doubled in size.
Step 2: Prepare the Filling
For meat pide, mix minced meat with finely chopped vegetables, spices, olive oil, and a little tomato paste. For cheese or vegetable versions, prepare fillings separately.
Step 3: Shape the Pide
Divide the dough into portions and roll each into an oval shape. Add the filling down the center, then fold and pinch the edges to form a boat shape.
Step 4: Bake
Bake in a hot oven until the crust is golden and the filling is cooked through. If using eggs, crack them on top during the last few minutes of baking.
Step 5: Serve
Remove from the oven, brush the crust lightly with butter, and serve hot.
